Masoor Chanti, sorted grain by grain.

Masoor Chanti and Masoor Dal from Balrampur, cleaned on a Sortex optical sorter and packed under four brands.

A harvest arrives with more than lentils.

The field, the threshing floor and the truck all add something. Hand picking catches most of it. In a kitchen, most is not good enough: one stone in a plate of dal is one too many.

  1. Stone. Grit and pebbles from the threshing floor.

  2. Husk. Loose seed coat left after dehulling.

  3. Discoloured grain. Weathered, immature or damaged.

  4. Broken grain. Split and chipped in handling.

  5. Foreign seed. Weeds harvested along with the crop.

An animated drawing of a Sortex optical sorter: lentils fall from a hopper down a chute, pass cameras, and jets of air push stones, husk, dark grains and foreign seeds into a reject bin while clean lentils fall into the accept bin.

The Sortex looks at every grain.

Feed

A vibrating tray spreads the lentils into a single layer. They slide down a chute and fall as a thin curtain.

See

High-resolution cameras on both sides read the colour of each grain as it falls past a lit background.

Reject

A stone, a husk, a dark grain: a nozzle fires a burst of air and knocks it out of the stream. Only clean masoor reaches the bag.

The same tray, as it arrived and after sorting. Every grain sits where it was; only the rejects are gone.

What comes out is only masoor.

Close-up of Masoor Chanti: whole, round, dehusked red lentils.
Masoor Chanti
The whole red lentil, dehusked and kept whole. Holds its shape in the pot. Some markets call it malka.
A heap of Masoor Dal: split red lentil halves.
Masoor Dal
The same lentil split in two. Cooks quickly to the soft, everyday dal of North Indian kitchens.
